We had enoki mushrooms wrapped in thin slices of beef. Enokitake are long, thin white mushrooms available fresh or canned. Enokidake are wild mushrooms with long thin stems and tiny caps. The hot and sour soup is served with enoki. I’m serving the noodles cold, with a side of raw carrots, cucumber, and enoki mushrooms. It’s becoming easier to find enoki in markets and supermarkets in Europe. Enokitake are found in some classic Japanese dishes.
