Idli is very easy to make. Take about a tablespoon of the curry and add it in the middle of the idli batter. Idli hot from the steamer with a bowl of spicy sambar is one of my favourites. Place the mixture in small portions in the idli moulds and steam the idlis for 12 minutes. Idli and dosa, made of fermented and steamed rice and lentils, are the best-known dishes from the south.
