Indeed, the frequency of caries in the sample was high (36.2% of the teeth). Solute gradients in oral biofilms also account for the local acidity that causes caries. This may provide an explanation for the positive correlation between the amount of sugar intake and the probability of caries development. As noted earlier, we cannot account for frequency of eating as a factor in caries occurrence. It should be noted that simply having a high-protein diet does not preclude the development of caries. Such a conclusion, based on alveolar abscesses, is a reflection of other dental problems, such as caries frequency and dental wear. These factors make drawing conclusions regarding diet from caries and wear problematic, but not completely useless. Caries frequency was higher in the posterior teeth than in the anterior teeth. Models of dental caries (laboratory, animal and human in situ) vary markedly in their complexity. However, in the cases of caries and periodontal diseases, these same pathogens increase in numbers relative to the commensal bacteria.
