Dental caries, or decay, is at first largely a chemical process and affects the tooth proper. The eating of sweets, and especially the sticky sweets—preserves and the like—was recognized as an important source of caries. The teeth are interesting in showing marked rotting or "caries," hitherto unknown in prehistoric skulls. Wild animals are not subject to caries or dental decay, as are man and domesticated animals. Examples of cariescaries For the experiments, 16 extracted, caries free human third molars were prepared. In contrast to the mandible, there are no caries or abscesses on the maxilla. Affected teeth tend to wear down rapidly leading to dental caries. Historically, artificial mouth models have been used since the end of the nineteenth century to investigate dental caries in vitro. The high frequency of caries likely suggests that these individuals were subsisting on a mixed diet. The same may be said of the relationship between diet and caries/ wear. Caries is formed by bacteria that are produced in dental plaque. For example, the amount of dental wear, frequency of caries, and calculus accretion were analyzed together because they are often related. An unanticipated byproduct of this extensive alteration was the introduction of caries and the formation of abscesses. Different paleopathologies were caused mainly by nutritional deficiencies (anemias); changes in infant metabolism (cranial hyperostosis); and infection or inflammation, including caries. Indeed, the frequency of caries in the sample was high (36.2% of the teeth). Solute gradients in oral biofilms also account for the local acidity that causes caries. This may provide an explanation for the positive correlation between the amount of sugar intake and the probability of caries development. As noted earlier, we cannot account for frequency of eating as a factor in caries occurrence. It should be noted that simply having a high-protein diet does not preclude the development of caries.
