Soaking the cod in lye gives the lutefisk a gelatinous texture. Lutefisk is traditionally eaten with cream sauce or pork drippings. These days, lutefisk is probably more popular among Americans than it is in Norway. Lutefisk is part of the Christmas celebrations in some Scanadinavian households. The lutefisk was white and flaky.
