The heat of baking causes the starch in flour to absorb liquid and swell: this process is called gelatinisation. Once the potato is cooked, complete gelatinization takes place, giving the potato a soft texture. Cooking cornflour and rice flour causes a process known as starch gelatinization. Sugar is effective in delaying starch gelatinisation in cakes.
