the process that takes place when small grains(= pieces) of starch(= a white substance in potatoes and rice) are heated in a liquid, making them break open, and causing the liquid to become thick:
Gelatinization happens when starch absorbs liquid and bursts, thickening the liquid.
The heat of baking causes the starch in flour to absorb liquid and swell: this process is called gelatinisation.
Once the potato is cooked, complete gelatinization takes place, giving the potato a soft texture.
Cooking cornflour and rice flour causes a process known as starch gelatinization.
Sugar is effective in delaying starch gelatinisation in cakes.
