a cut of meat from the front end of the ribs(= the bones that curve around from the back to the chest) of a cow:
Place the flanken in a pot, cover with water, and bring to a fast boil.
Flanken is short ribs cut across the bone instead of between the bones.
Flanken are a tough cut of meat, with a lot of fat.
