In addition to starch and protein, the starchy endosperm is a repository for nucleic acids and micronutrients.
From this it can be concluded that it takes 5 days for all the starchy endosperm cells to lose plasma membrane integrity.
Since they do not surround starchy tissue which requires hydrolysis during germination, it is unlikely that this aleurone produces large quantities of -amylases.
The secretory apparatus of the aleurone then proliferates, supporting increased hydrolase synthesis and secretion to degrade the starchy endosperm.
The amylases that degrade the starchy endosperm after germination are largely secreted by the aleurone layer after imbibition.
However, we will come back to the problem of small starchy seeds later.
Thus, there is no clear ultrastructural characterization of how starchy endosperm cells die during development.
Three classes of aleurone cells are distinct from the typical aleurone surrounding most of the starchy endosperm.
No expression is found in the parts of the seed not surviving desiccation, the maternal tissue and the starchy endosperm.
Surrounding the starchy endosperm is a highly specialized layer of endosperm tissue that remains cellular and viable at grain maturity.
Other components of the starchy endosperm may be further regulators of aleurone function.
The latter type probably characterizes dead cells because of the similarity in appearance to mature starchy endosperm cells (micrograph not shown).
Thus, in the case of premature slow drying, when differentiation into starchy endosperm cells is arrested, the meristematic cells acquire desiccation tolerance.
The endo-b-mannanase in the starchy endosperm was mainly from the aleurone layer.
The storage polymers in the starchy endosperm must then be mobilized and transported to the embryo to fuel its subsequent heterotrophic growth.
The sample contained inner pericarp, seed coat, aleurone layer and some remainders of the starchy endosperm.
On a per seed (grain) part basis, most activity was present in the starchy endosperm, the largest tissue.
Activity of endo-b-mannanase was first detected in the aleurone layer and starchy endosperm at 48 h from the start of imbibition, and increased thereafter.
Seedlings germinated from intact grains (top) and seedlings germinated from grains with most of the starchy endosperm and aleurone removed prior to imbibition (bottom).
The starchy endosperm also has a heterogeneous developmental origin.
Along with providing hydrolases for the breakdown of the reserves in the starchy endosperm, the aleurone is also a storage tissue in its own right.
One could conclude from these data that as soon as an individual starchy endosperm cell completes starch accumulation, it loses its membrane integrity.
The inserted image illustrates seed parts: aleurone layer (al), scutellum (sc) and starchy endosperm (en).
The source of hydrolytic enzymes that digest starchy endosperm reserves is largely from both the scutellum and the aleurone.
They have many morphological similarities to the aleurone cells around the starchy endosperm.
At the end of the differentiation stage, aleurone layer cells and starchy endosperm cells are formed.
From the fact that starchy endosperm cells are dead in mature kernels, it does not automatically follow that these cells are not desiccation tolerant at early stages of development.
The first foods to be included are usually starchy gruels and pastes, but these must very soon be followed by a wider range of foods including animal and vegetable proteins.
Another advantage of having all seed types based on endosperm and embryo characteristics is that we would not have to worry about properly categorizing the small seeds with starchy endosperm.
Channels in the outer walls of the aleurone cells form during germination and are thought to permit the diffusion of secreted proteins to the starchy endosperm.
By comparison, gardeners in the forest zone plant starchy staples, particularly plantain (85%) and cassava (5%), along with other crops such as cocoyam and pineapple.
Although cereal endosperm is a simple tissue, consisting of only two main cell types (aleurone layer and starchy endosperm cells), it is rather difficult to study their fate during development.
Although we have focused on hormonal control of aleurone cellular processes, aleurone function cannot be completely understood without placing it in the context of the starchy endosperm undergoing hydrolysis.
Thus, young starchy endosperm cells are not tolerant to fast drying, from which we conclude that during development desiccation tolerance is not acquired in starchy endosperm cells.
Upon imbibition the aleurone layer uses these stored reserves to synthesize and secrete many of the digestive enzymes that mobilize the insoluble reserves in the starchy endosperm.
The lesion in this mutant is in a gene involved in the formation of complex carbohydrates and results in the endosperm containing more simple sugars than normal starchy lines.
The fresh weight of the aleurone layer was about 20% of that of the starchy endosperm, so the endo-b-mannanase content per unit weight was greatest in the former.
A persistent endeavour is being made to pretend that starchy flour is equal to or better than wholemeal.
